Describe Le Papillon Patisserie

Le Papillon is a modern patisserie based in Surrey. The business is set in 2500 sq ft of space and we produce for retail, wholesale and has a specialist wedding cake department where couples can come in for a one-on-one design session to create their perfect wedding cake with me.

How did Le Papillon Patisserie get started and how long has the business been going?

Le Papillon was started 11 years ago, and it happened to be the first place to hire me when I was a student looking for work experience. Three years ago the owners were retiring and I was looking at opening a patisserie to boost my wedding cake business. In addition to adding the wedding cakes, I have changed the shop slightly to bring it in line with a more modern patisserie.

Have you always wanted to be a Patissier?

Absolutely! I remember cooking from a very early age with my mum, and I believe it’s the kind of profession where you can’t develop a love for what you do, you are born into it. I have always enjoyed baking and couldn’t wait to specialise in patisserie when I left school. I also studied sugar craft, which is where I believe I benefit as a Patissier by having both the knowledge to bake and decorate cakes. I can honestly say I walk into work happy every day, knowing I will be spending the day doing what I love!

What type of cakes do you make?

At Le Papillon we have quite a large range of cakes to choose from, and we create bespoke cakes for brides if requested. We tend to stay away from anything ‘novelty’ and focus on very ‘edible’, yet beautiful cakes. I never understand when people make a cake to just look pretty. I believe that a cake should be delicious to eat as well as elegant on the outside. We are certainly one of the market leaders for Croquembouche in the country as well as patisserie style wedding cakes.

Does Le Papillon Patisserie have a specialist area?

Yes, I would say the Croquembouche. It’s a classic French wedding cake made of choux buns dipped in caramel, and filled with crème patissière. It’s so delicious and looks just stunning. The Croquembouche is quickly becoming very fashionable with our British clients.

What areas do you cover?

We are based in Surrey, just outside of Guildford in a town called Woking. We theoretically cover worldwide, but the distance will obviously be reflected in the cost of what we produce. On a few occasions we have been asked to fly out to locations to prepare wedding cakes, which is amazing fun!

What sets Le Papillon Patisserie apart from other wedding cake makers?

I think a couple of things, such as our very personal service, and cakes that look just a little bit more ‘wow’ than your traditional iced cake. If I was to choose one thing, I would say the taste. So many wedding cakes go uneaten because they taste dry and average. We bake cakes to taste great first then look good second. Our ingredients are the best you can find; if we have to import something because it’s better then we do.

What’s the best thing about your job?

That’s a tough one. I think it’s a tie between the moment when you hear how happy a couple was with their wedding day and cake, and the moment you sit down with the cake trimmings and a cup of tea after a long, hard day!

Do you have a favourite cake that you have made?

This is always a tough question. I think right now our Dark Chocolate Cigarello with Orange Calla Lilies and Miss Piggy Roses wins this one. It is closely followed by our Tea Party Tower, or maybe our Chocolate Wrapped Gateaux…

Random question… iphone or Blackberry?

iPhone. If you had asked me 3 years ago I would have said Blackberry. I see that Blackberry is better for email, but the iPhone is just so much easier to navigate the internet, find places, and upload photos to our Facebook page etc. I would be completely lost without it. We’re even now using an iPad to showcase our cakes to clients when they come into tastings!

My search to find the perfect recipes has been going on for years. Full-time testing and research, and making wedding cakes for friends and family began in February 2009, and I officially started the company in spring 2010.

I knew I loved baking as a child, but I only really knew about 5 or 6 years ago that it could be a viable career option for me.

I have a silent partner, and two other lovely part-time girls. I am hoping that one of them can become full-time soon!

Whatever type the client wants! But our style is elegant, clean lines with a contemporary feel.

What sets The Abigail Bloom Cake Company apart from other cake makers?

The more unusual design and the sponge I guess? I have been told many times by people that it is the best cake they have tasted (whilst also comparing it to other top London cake makers). It is all about the sponge and the finish for me, however, that is personal of course. I will alter the sweetness of the icing according to the taste of the client to make sure it is perfect for them.

What’s the best thing about your job?

It often doesn’t feel like a job because I enjoy it that much.

Wedding Cake Money Saving Tips

For many couples, the wedding cake is an extremely important element to the wedding and is used as one of the main centrepieces in the reception. The cake is usually on display for everyone to see and is then cut in front of all the guests as part of the wedding breakfast.

Wedding cakes, just like everything else, can be pretty expensive. However, below are a few tips and ideas on how to make your wedding cake more cost effective without losing the wow factor.

1. Dummy Tiers

Dummy or fake tiers can replace real tiers. If you would like a really big cake but do not have hundreds of guests, fake tiers can be iced and used to increase the size. It is also usually less expensive to have an almost entirely fake cake, perhaps with one real tier to cut in front of the guests, fairly near the bottom. One or more large cutting cakes which are not part of the display can be kept in the kitchen and handed out after the cake has been cut. Cutting cakes can even be made by family members or friends!..

Tiered wedding cakes

Traditionally a wedding cake was made of three tiers of boozy rich fruit cake.  The bottom layer was cut at the reception and the middle one distributed to guests and well wishers. The top tier of the cake was kept for the christening, and symbolised the connection between the marriage union and birth of the first child.

Nowadays, although it is less common to have an entire wedding cake made in fruit, this tradition of preserving the top tier for the christening or even the first anniversary is still a popular choice for newlyweds.

Traditional fruit cake is the best type of cake to preserve as it has a long shelf life, and unlike most other flavours it tastes better as it matures. If the fruit cake is not going to be eaten within six to nine months, it is best to freeze it to preserve it for longer…

Cakes by Beth started as a simple Facebook group, which I created to showcase my cakes to friends, family and anyone who was interested. A good friend of mine suggested I started a blog about my cakes, so I did, but quickly I wanted more. My website officially launched in May 2010 so Cakes by Beth has recently celebrated its first birthday!

Have you always wanted to make cakes for a living?

I have always loved baking, but growing up I didn’t even realise that people could make a living from the kind of things that I now do, unless you were famous like Jane Asher or owned a bakery, and to do that I thought you had to grow up in one. At school I was very good at science and art, but overall the science prevailed and that is what I went on to study. It was during my PhD that I decided to make my first 3D novelty cake (a surprise Oscar the Grouch birthday cake for my brother). I absolutely loved creating it and the reaction I got was amazing. So the story of my cakes began.

Can you remember how old you were when you made your first cake?

It is a running joke in my family that whenever I baked anything I would go above and beyond with the level of detail and amount of effort. I remember decorating apple pies, jam tarts and all sorts of baked items as quite a young child, all with pictures and details on top created out of pastry. It took me hours and I used to take over the whole kitchen. The first time I remember decorating a birthday cake was in my early teens for my dad’s birthday. It was a pond with little fat frogs sitting on lily pads. This was also in the days before digital cameras, and unfortunately when we got the film developed all of the images of it were blurred. I was devastated.

What type of cakes do you make?

I create bespoke cakes and cupcakes for special occasions; from weddings to birthdays, christenings and corporate events. I also offer a range of cake pops and cookies which, along with cupcakes and mini cupcakes, make fantastic edible wedding favours. Everything is made from quality ingredients, locally sourced and fair-trade wherever possible, and hand-crafted with the utmost care and attention to detail.

What sets Cakes by Beth apart from other cake makers?

When I design cakes, my aim is always to make them clean and contemporary but with an interesting twist and something that makes them stand out. I get so many fantastic reactions from people who say that my cakes are something different that they have never seen before. That is definitely my aim, to create cakes that are modern but still sticking to a lot of traditional values. I currently find that my designs featuring clusters of blossoms and edible vintage brooches are particularly popular.

I am also an ethical wedding supplier, not only in the ingredients that I use but in my pricing. I don’t believe in hidden charges and price hikes just because the word ‘wedding’ is mentioned. I pride myself on a personal, good value service with cakes that will exceed your expectations and fit perfectly with your special day.

What’s the best thing about your job?

As much as I absolutely love creating all of the details and decorations for my cakes and seeing the whole thing come together, the absolute icing on the cake (so to speak) would have to be the moment when the cakes or cupcakes are first seen by their intended recipients. It is an absolutely magical moment and a great feeling, knowing that I have made their day extra special by creating something personal to them that is also delicious.

Does Cakes by Beth have a specialist area?

As well as beautiful, contemporary wedding cakes, I also make excitingly different novelty cakes, which was where Cakes by Beth started and is still a major part of my business. People come to me particularly for my 3D creations and cute, fat animals. They are fantastic for children’s birthday parties, but a lot of big kids order them as well!

Do you have a favourite cake that you have made?

This is really tough as I have so many favourites! Can I select two? These would be the Palm House wedding cake, which I created for a wedding in Sefton Park. The decorations were inspired by the exotic plants at the venue, as well as the bridesmaids’ dresses and the bride’s bouquet. It all looked absolutely stunning.

My other favourite is a cupcake tower that I created for an Islamic engagement party. There was a huge stage, beautifully decorated in reds, creams and golds and so the cakes reflected this. It is really dramatic and different to have a gold cake, and with the gold cupcake cases and gold and red flowers I was absolutely in love with the way everything looked together.

Random question…Strawberries or raspberries?

Raspberries, definitely. They are so fruity and go with so many different flavours, I love them. People tend to think that chocolate and strawberries is a classic combination but I much prefer chocolate and raspberries, or raspberries and lemon. Two incredible combinations in cakes.
